1 box Rigatoni .
1/2 jar Classico traditional basil pesto.
1/2 jar Classico Alfredo sauce.
3-5 T. Sun dried tomatos chopped .
In a sauce pan warm up the Alfredo and pesto, then add cooked and drained pasta. mix all together in a large bowl. Great with grilled chicken or shrimp.

Spring Rolls
4 chicken breasts cooked and diced ( I grilled mine)
2 garlic cloves chopped
1 T. cilantro
1/4 c. low sodium soy sauce
1 tsp. sesame oil
mix together and set aside.
1 small head of green cabbage cut up
1/2 pkg of match stick carrots
Cook in a pan with a lid on stove with
1/2 c. water until soft.
Mix all the above ingredients together then spoon onto egg roll wraps.
Wrap up tucking in sides like a burrito.
Heat oil on a large pan and place rolls into oil until golden brown.
Dipping Sauce
1/2 c. pack brown sugar
1 T. cornstarch
mix together and place in pan on stove.
1/2 c. pineapple juice
1/3 c. white vinegar
1T. soy sauce
Mix in all ingredients and heat to a boil stirring constantly.
Boil for 1 min.

Mexican tortilla Stackups
I just got this recipe from my neighbor last week, and i've already tried it and we loved it! I hope you all enjoy it as much as we did.
1 Lb. Hamburger (or ground turkey)
1/2 C. chopped onion
1 150z. can black beans (drained and rinsed)
1 can mexican style tomatoes ( i used the one with green chilies in it
1 C. corn
1 envelope taco seasoning mix
Corn tortillas
2 C. grated Cheddar cheese
Cook meat & onion, then drain. Add beans, tomato with juice, corn and taco seasoning.. Bring to boil simmer five minutes.
In 9 X 13 pan- layer tortillas, meat mixture cheese.... etc.
Pour 1 C. water along inside edge of pan and cover tightly with foil Bake @ 375 for 30-35 minutes.
Serve with lettuce, sour cream and Salsa

Banana/Blueberry Muffins
1/2 C. Butter
1 1/4 Sugar
2 Eggs
1 C. Sour cream
1 tsp. Baking powder
1/2 tsp. Baking soda
1/4 tsp. Salt
2 C. Sifted flour
1 C. Blueberries or 2 ripe bananas
Nuts if desired
Mix in order
Place in greased muffin tins and bake @ 400 for 20-25 minutes
